Fruit Buckle

I found a great recipe for Blueberry-Nectarine Buckle in the July issue of Parents Magazine. I've been looking for a good buckle recipe and I've finally found it!

INGREDIENTS
2 cups biscuit mix
1 cup sugar, divided
1 egg, lightly beaten
1/2 cup reduced fat milk
1 tsp finely shredded lemon peel
1 medium nectarine, pitted and chopped
1 1/4 cups fresh blueberries
1/2 cup flour
1/4 cup butter

DIRECTIONS

Preheat oven to 350 degrees. Grease the bottom and 1/2" up the sides of a 1 1/2-2 quart baking dish (I used a deep dish pie plate). In a mediume bowl, combine biscuit mix, 1/2 cup sugar, egg, milk and lemon peel. Stir until moistened. Spoon batter into pan.

Top with fruit.

Mix flour and remaining sugar in a bowl. Using a fork, cut in butter until mixture is crumbling, sprinkle over fruit.

Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean. Let cool for half an hour. Serve warm, preferably with vanilla ice cream! YUM!

The first time I made it I used 1 cup sliced strawberries and 2 cups of blueberries.

The second time, I used 3 peaches and 1 cup sliced strawberries. Both times it turned out great with all the added fruit!

Creamy Spinach Ravioli

So good, my daughter gobbled it up!

INGREDIENTS

2 pkg (9 oz each) refrigerated cheese ravioli (I used a 25 oz package of four cheese ravioli)
1/2 cup (1/2 of 8 oz tub) Philadelphia Chive & Onion Cream Cheese Spread (I used the reduced fat version)
1 cup milk
1/4 cup plus 2 Tbsp grated parmesan cheese, divided
4 cups baby spinach leaves
2 Tbsp chopped fresh dill
grated peel from 1 lemon
6 cherry tomatoes, quartered


DIRECTIONS
Cook pasta according to package. Meanwhile, place cream cheese spread in a large skillet. Add milk; cook on medium heat 1 to 2 minutes or until cream cheese is melted and mixture is well blended.


Add 1/4 cup of the parmesan cheese, spinach, dill and lemon peel. Mix well.


Drain pasta. Add to cream cheese sauce and toss to coat. Serve topped with tomatoes and remaining parmesan cheese.

Baked Zucchini Squares

Zucchini is abundent right now and I never know what to make with it. This is super easy and so tasty!


INGREDIENTS
1 cup biscuit/baking mix
1/2 cup grated Parmesan cheese
1 Tbsp minced fresh parsley
1 1/2 tsp dried oregano
1 1/2 tsp dried basil
1/2 tsp salt
4 eggs
1/2 cup vegetable oil
1 small onion, chopped
3 medium zucchini, thinly sliced

DIRECTIONS
In a bowl, combine the biscuit mix, Parmesan cheese, parsley, oregano, basil and salt. Combine eggs, oil and onion; stir into dry ingredients just until combined. Stir in zucchini. Transfer to a greased 13-in. x 9-in. x 2-in. baking dish. Bake at 350 degrees F for 30-35 minutes or until golden brown and set. Cut into squares.
